In the summertime heat I’m trying to make meals that cool me off. Its just too hot to cook with the oven sometimes. Tonight was one of those nights. This simple salad has fresh veggies and protein with a tasty lime and honey vinaigrette. I really wanted to use red bell peppers and avacado but was out. I ended up adding edamame which boosts the protein content but does not add quite the flavor I wanted. However it was a tasty cool meal after running at the gym in this 90 degree weather.
- black beans, drained and rinsed
- 2 ripe avacados, cubed
- 1 red bell pepper, diced
- 1 cucumber peeled and cubed
- Corn (cut it off the cob or use frozen)
- 1 large tomato, diced
- ½ large red onion, diced
- chiles, diced
- the juice of 1 lime
- garlic, fresh tablespoon chopped
- fresh cilantro, chopped
- 2 tablespoons red wine vinegar
- 2 tablespoons extra virgin olive oil
- hot sauce, to taste (I like cajun sunshine sauce)
- salt and pepper to taste
- 2 tablespoons honey
Mix it all together in a big bowl. I added and Edamame (out of the pod) but would have preferred 2 ripe avacados cubed. I would only do that if you are serving it right away so it does not turn an unappetizing color. I served it on corn tortillas. But you could easily serve it with tortilla or pita chips as a salsa.
